Dr. Barnard's Roasted Red Pepper Oil Free Salad Dressing

FYI-For those of you who haven't seen Forks Over Knives, or those of you who saw it and want to share it with loved ones, the movie is finally for sale on DVD and Blue Ray. Yipee! You can order it here before it hits stores.

Not the most glamorous photo, I know, but I didn't want to hold out on you any longer.

I was first served this salad dressing at an event at Whole Foods and I was wowed. It comes straight from Dr. Neal Barnard himself. Thank you Ellen, our Whole Foods Healthy Eating Specialist, for introducing us to this dressing!

The ingredients are so simple: jarred roasted red pepper (of course you could roast and peel one yourself if you are so inclined), raw garlic, balsamic vinegar, salt, pepper and thyme. I'm sure you could use whatever herb tickles your taste buds. The resulting dressing is so packed with flavor that you will NEVER miss the oil.

Again, watch out if you have a raw garlic sensitivity. I recommend roasting your garlic first if that is the case. I imagine that your dressing would be out of this world if you went that extra step.
