Adventures in Pressure Cooking. Winners of The New Fast Food by Jill Nussinow.

This past weekend I set out to recreate a favorite recipe of mine, Cuban Black Beans with Kale, using my Instant Pot electric pressure cooker. It's a recipe that was totally inspired by a recipe by Lindsay Nixon, The Happy Herbivore, from her book Everyday Happy Herbivore.

I've served my version of it at parties to rave reviews and I crave it! It's that good. So I thought, maybe I can make this cheaper, faster and easier using my Instant Pot. No more canned beans, no more multiple steps. Pretty much just throw everything into the pot (after soaking the beans overnight) and let it pressure cook.
