Ingredients
- 1/4 cup chopped walnuts (or almonds)
- 1/4 cup pecans ( or hazelnuts )
- 1 mashed banana
- 1 tbsp cinnamon
- 1 pinch nutmeg
- 1 pinch ginger
- 2 whole eggs
- 1 tbsp Almond Butter
- 2 tbsp pumpkin seeds
- handful of blueberries
- 1/4-1/2 cup almond milk
Method
- Combine nuts and seeds in a food processor to get a grain like consistency and leave to one side
- whisk up eggs and almond milk together with a fork in a pot
- add in mashed banana
- add in almond butter
- add in the spice and nut mix
- cook over a low heat until it reaches the desired consistency
- Sprinkle the pumpkin seeds and berries on top
