Beauty of this one is that it goes with a few things.. I served it initially with salmon but had leftovers so had it with burgers the next day :-)
- 1 cup cherry tomatoes sliced in quarters
- 1 spring onion , finely chopped
- 1 clove garlic, crushed
- 1 tablespoon extra virign olive oil
- 1 teaspoon apple cider vinegar
- 1-2 teaspoons dried basil ( you can also use fresh basil.. 1 tablespoon fresh to 1 teaspoon dried )
- himalayan rock salt to taste
Method
- combine all ingredients in bowl and mix together
