Tomato and Basil Relish

Beauty of this one is that it goes with a few things.. I served it initially with salmon but had leftovers so had it with burgers the next day :-)

Ingredients


  • 1 cup cherry tomatoes sliced in quarters
  • 1 spring onion , finely chopped
  • 1 clove garlic, crushed
  • 1 tablespoon extra virign olive oil
  • 1 teaspoon apple cider vinegar
  • 1-2 teaspoons dried basil ( you can also use fresh basil.. 1 tablespoon fresh to 1 teaspoon dried )
  • himalayan rock salt to taste

Method

  1. combine all ingredients in bowl and mix together
