I got this recipe from a friend of mine, and i've made it a lot.. I even made the bars and took them with me when i was training and taking part in an event called Gael Force West.. I didn't take any energy gels.. just a few of these and they kept me going �
Ingredients
- 1 and 1/2 cup ground almonds
- 1 and 1/2 cup ground walnuts
- 1/4 cup sunflower seeds
- 1/2 cup pumpkin seeds
- 1/2 cup raisins (chopped dates or sultanas)
- 1 banana mashed
- 1/4 cup agave syrup (raw honey or maple syrup)
- 1 cup dried cranberries
- 1 tsp cinnamon (nutmeg or cardamon)
Method
- Preheat the oven to 135degC
- Mix all the ingredients into a large bowl. The mix should be quite sticky
- Make sure everything is coated with the mashed banana and syrup
- Using wet fingers press the mix into a 7x11" lined baking tray
- Bake for 30 mins to 1 hour depending on degree of 'chewiness' required
- After allotted time remove from oven and press on wire tray to cool
- Cut into slices and store in the fridge
These also freeze well :)
