Ingredients
- 1 avocado
- 1 cup cooked chicken chopped
- 1/2 tsp crushed garlic
- handful cherry tomatoes cut into quarters
- 2 spring onions - finely chopped
- 4-6 Lettuce leaves
- 1/2 lemon (juice ).. or can use lime
- salt and pepper to taste
Method
- Mash up the avocado into a bowl until smooth
- Squeeze the lemon (or lime ) juice into the bowl and mix
- Add all the other ingredients and mix until everything combined.
- sprinkle a little salt and pepper on to taste and combine again
- Serve mixture into clean dry lettuce leaves and enjoy
