I got the inspiration and core recipe from Elana's Pantry Paleo Dirty Rice, with a few modifications.
And i was MORE THAN pleasantly surprised. I have leftovers for tomorrow and i have frozen some too.
Ingredients
- 2 TBsp coconut oil
- 4 cloves garlic, crushed
- 1 bunch scallions, chopped
- 1 green pepper, diced
- 1 red pepper, diced
- 2 cups cauliflower, riced in your food processor
- 1 bay leaf
- 1/2 tsp himalayan rock salt
- 1/2 tsp pepper
- 1/4 tsp chili flakes
- 1/2 tsp cumin seeds
- 2 cups chicken stock (gluten free)
Method
- Heat the oil in a large frying pan over a medium heat.
- Add garlic, scallions, and peppers and saut� until soft.
- Stir in riced cauliflower, adding bay leaf, salt pepper, chili flakes and cumin seeds.
- Add in the chicken stock
- Allow to simmer over a medium heat for about 30 minutes or until liquid is cooked down.
