peppermint + cacao balls


These raw balls are for all the choc-mint fans out there! It�s no secret that I love a raw ball and I�m also a HUGE fan of the choc-mint combo. So these balls were born. Raw cacao powder provides the chocolate dimension (and a nice hit of antioxidants) and pure peppermint oil provides the mint (and your digestion will love it).

You can buy pure peppermint oil at health food shops. Just make sure it�s therapeutic grade peppermint oil that can be ingested (and not an essential oil made for aromatherapy or external use). If you can�t find it, you could use peppermint extract or essence instead (available at most supermarkets).

ingredients
  • 1 cup raw cashews
  • � cup shredded coconut
  • 2 tbsp raw cacao powder
  • 1 tbsp raw virgin coconut oil, softened
  • 2 tsp rice malt syrup
  • 1-2 drops pure peppermint oil

preparation

1. Pulse the cashews and shredded coconut in a food processor until you get fine crumbs. Stir through the cacao powder, coconut oil and rice malt syrup.

2. Stir through the peppermint oil. You may want to do this one drop at a time, tasting as you go. I add 2 drops, but it is quite strong so you may prefer less.

3. Roll the mixture into balls and store them in the fridge, as the coconut oil may start to melt at room temperature.

Makes 16 balls.

NB: I use a 20ml tbsp. If you have a 15ml tbsp (if you're in the US or UK), you can measure out 4 tsp in place of each tbsp.
